Birthday Party!

So today my family came over for my birthday, which went great. I'm really lucky to have such a close family! So my party was completely vegan and worked out well. My mom made the seitanic red & white bean jambalaya without the seitan. Sadly I don't have any pictures of that.. But my Aunt made this beautiful fruit basket from a watermelon, so awesome!
I also made a hot artichoke dip from How it all Vegan Again, but that didn't turn out so awesome, the first thing that hasn't worked for me out of that book. My mom also made a spinach dip, Yum! She also took some faux sour cream and mixed it with taco seasoning, spread it on tortillas and cut them into little rounds, which didn't sound like it would be great, but it was probably the biggest hit besides the cake. I also made 2 batches of cookies (chocolate chip and sugar), well 4 actually I made 2 a day ahead and my family ate them! And for the most awesome cake ever...... A peanut butter zig-zag ice cream cake!!



I used the cake recipe from VegWeb and also the icing recipe. For the cake I quadrupled the recipe (large family) split into two pans took a little of the batter of each and added cocoa powder, swirled it around with a spoon to make a marble effect. I then froze both layers, and after they were frozen I slightly defrosted the ice cream to spread on top of one layer, topped it with the other layer and froze it until the ice-cream was brick hard. Then I frosted it and froze it until ready to serve. Once we were ready I also let it defrost a little to be able to cut. I was delicious!

All in all it was a great birthday!
