McLindseys
Well, I haven't blogged too much lately, but these were so good I had to post about it! So a friend of mine had a McGriddle from McDeath the other day and I wanted something similar without unnecessary death. So today I decided to do it. I made these pancakes from VegWeb, subbing maple syrup for 1/4 of the water and omitting the sugar, I also used whole wheat pastry flour since that's all I had. I also made these eggs also from VegWeb... so delicious! And the cheese sauce from... can you guess? And I made the White bean and tempeh sausage patties from VWAV, together it was heaven! Birthday Party!
So today my family came over for my birthday, which went great. I'm really lucky to have such a close family! So my party was completely vegan and worked out well. My mom made the seitanic red & white bean jambalaya without the seitan. Sadly I don't have any pictures of that.. But my Aunt made this beautiful fruit basket from a watermelon, so awesome!
I also made a hot artichoke dip from How it all Vegan Again, but that didn't turn out so awesome, the first thing that hasn't worked for me out of that book. My mom also made a spinach dip, Yum! She also took some faux sour cream and mixed it with taco seasoning, spread it on tortillas and cut them into little rounds, which didn't sound like it would be great, but it was probably the biggest hit besides the cake. I made a cheese ball from vegweb.com which turned out well:
I also made 2 batches of cookies (chocolate chip and sugar), well 4 actually I made 2 a day ahead and my family ate them! And for the most awesome cake ever...... A peanut butter zig-zag ice cream cake!!
I used the cake recipe from VegWeb and also the icing recipe. For the cake I quadrupled the recipe (large family) split into two pans took a little of the batter of each and added cocoa powder, swirled it around with a spoon to make a marble effect. I then froze both layers, and after they were frozen I slightly defrosted the ice cream to spread on top of one layer, topped it with the other layer and froze it until the ice-cream was brick hard. Then I frosted it and froze it until ready to serve. Once we were ready I also let it defrost a little to be able to cut. I was delicious!
All in all it was a great birthday!

My Birthday.
Today was my 18th birthday and father's day. I feel like this post should be substantial since it's my first. Yesterday, I went to Blue Bayou (water park) with my friends Rachel and Elizabeth. We also went and saw The happening which wasn't as great as I thought if would be. But today I went grocery shopping and got ingredients for a lower-fat oatmeal pumpkin chocolate-chip cookie cake from Vegan with a Vengeance. I subbed the oil for applesauce and omitted the nuts, I also subbed chocolate chips for the raisins (not very low-fat I know, they're just good.) because my Dad has had some health problems and needs an almost no fat diet. Now for the Food Porn:
My sister and brother-in-law came over with my niece and nephew and my nephew was in love with the cookie cake! Success for low-fat vegan cookie cake!
I also received a package in the mail from a vegan snack exchange on veggieboards.com. I got a box of chocolate truffles (delish), strawberry basil conserves, fake beef jerky (Omg, awesome!), a rasberry marinade/dressing and 2 Alternative Baking company cookies. My mom cooked some squash, zucchinni and tempeh with the rasberry marinade, it was delishious! I could've eaten the whole pan! I'm going to have to try some tofu marinated in it as well soon.
